Ginger Crunch

Ingredients:

  • 175g butter, softened
  • 3/4 cup sugar
  • 2 cups flour
  • 1 1/4 tsp baking powder
  • 1 1/4 tsp ground ginger

Icing

  • 1 cup icing sugar – sifted
  • 2 tbsp butter
  • 2 tbsp golden syrup
  • 2 tsp ground ginger
  • 1 1/4 tsp ground ginger

Method:

1. Preheat the oven to 180°C. Grease a 35cm x 30cm shallow baking tin. Beat together  butter and sugar  until light and creamy. 

2. Combine the flour, baking powder, and ginger. Add to butter mixture, mixing to a soft dough.

3. Press dough evenly over the base of the prepared tin. Bake for 20 minutes, until light golden. Ice while hot.
